Chocolate chips cake recipe
This chocolate chip cake turns your favorite muffin into a simple crowd-pleasing cake.
First, I always sift or mix my dry ingredients. It helps to reduce any over the mixing of the batter once you add the rest of the ingredients.
If doing this by hand, using a mixer with the paddle attachment or a whisk, combine the butter, oil, and sugar (you can reduce the sugar to a cup if you prefer less sweetness in your cake). You can also add an optional teaspoon of orange zest during this step to give the cake an extra boost of citrus flavor (for added flavor, you can add more orange zest).
Beat on medium speed until light and fluffy, about 4 minutes. You may need to scrape down the sides of the bowl a couple of times to make sure everything is incorporated. Add eggs and vanilla extract, mix until combined.
Add flour mixture in three additions, alternating with buttermilk, beginning and ending with flour. Finally, mix in the chocolate chips.
Pour into loaf pan and bake for 45-60 minutes or until toothpick inserted in center comes out clean. You may need to cover the pan with foil if the top begins to brown too quickly while baking. Cool completely on a rack before serving.
